Protein Pancakes

Ingredients:

  • 2 ripe bananas

  • 2 eggs

  • 50-60g oats

  • 1 Tbsp flaxseeds

  • 1 Tbsp chia seeds

  • 1 scoop protein powder

  • 1/4 tsp baking powder

  • Plant based milk as required

  • 1/2 cup natural yogurt

  • 1 Tbsp coconut oil

 

Method:

Blend all the ingredients together. Melt the coconut oil on a frying pan and pour the pancake mix forming small pancakes. Stack your pancakes on a plate. Pour the natural yogurt on top. You can serve it with some homemade raspberry jam - raspberries mixed with chia seeds and maple syrup. You can also add fresh blueberries, raspberries, figs, bananas, peanut or almond butter, maple syrup or honey.
