Bean Burgers

Ingredients:

  • 2 cans (400g) kidney beans

  • 1/2 red onion

  • 100g of breadcrumbs

  • Chopped parsley

  • 2 tsp chilli powder or 1/2 tsp cayenne pepper

  • 1 large egg

  • Olive oil for frying

For the dressing:

  • 200g of natural yogurt

  • Juice from 1 lime

  • Fresh mint

Method:

Mash the beans with a fork or a potato masher then add all other ingredients and mix well together. This recipe will make 6 burgers out of the mix.
Fry the burger patties for about 4-5 minutes on each side.

Serve with some salad and drizzle with the dressing.
