Vegetable "Spaghetti"


  • 2 medium courgettes 

  • 3 medium carrots, peeled 

  • 1 Tbsp of green pesto

  • 1 Tbsp of pine nuts 

  • 1 Tbsp of Parmesan cheese, grated 

  • Fresh basil leaves


Use a spiralizer to make the spaghetti-like noodles from the courgettes and carrots. Cook it in a saucepan for about 5 minutes or until the vegetables are cooked but still a little bit crunchy. Add the pesto and pine nuts and mix well together. Sprinkle some grated Parmesan and top with some fresh basil leaves.
