Thai Coconut and Kale Soup
Ingredients:

3 cloves of garlic

1 large onion

1 tbsp of ginger
Fry together in coconut oil or olive oil for a couple of minutes. Then add:

1/2 tsp cayenne pepper

2 tsp turmeric
-
1/2 tsp chilli flakes
-
1l of vegetable stock
-
1 can of chopped tomatoes
-
1 can of full fat coconut milk
-
1 cup of red lentils
-
100g kale

Method:
Cover the saucepan and cook on a low heat for 20 minutes until the lentils are soft. Add the kale and cook for another 10-15 minutes. Done! Quick, simple and Fitalicious!
