Sweet Potato Brownies


  • 2 medium sweet potatoes (peeled, chopped into small squares and steamed or cooked)

  • 100g of oats

  • 100g of ground almonds

  • 6 tbsp of cacao powder

  • 12 Medjool dates

  • 6 Tbsp of Maple syrup

  • 2 Tbsp of coconut oil

For the icing:

  • 2 Tbsp of raw cacao powder

  • 2 Tbsp of coconut oil

  • 2 Tbsp of almond butter

  • 1 Tbsp of maple syrup


Turn the oven on to 180 degrees Celsius. Mix the potatoes and the dates in a food processor until smooth. Add the rest of the ingredients and blend well. Add the mixture into a baking tray (grease it with some coconut oil before). Leave it in the oven to bake for about 40 minutes.
Once ready take the brownie out and let it cool. In the meantime prepare the icing
by melting all the ingredients in a saucepan. Put in a fridge to cool down.
Take the brownie out of the baking tray and spread the icing on top.
