Red Kidney Beans Brownie

Ingredients:

  • 2 cans of red kidney beans (dispose of the water and rinse the beans well)

  • 8 Medjool dates

  • 3 small boxes of raisins (the tiny snack boxes)

  • 2 bananas

  • 4 Tbsp of raw cacao powder

  • 5 Tbsp of honey or maple syrup (use less if your bananas are ripe)

  • 4 eggs

  • 3 Tbsp coconut oil

  • 1 tsp soda bicarbonate

  • 1/2 cup chopped nuts (I used pecans and walnuts)

  • 1/4 cup cacao nibs

  • 2 Tbsp desiccated coconut

 

Method:
Warm up the oven to 180 degrees Celsius. Put all the ingredients into a blender leaving the nuts, cacao nibs and desiccated coconut. Blend it well until you have a smooth paste. Add the cacao nibs and chopped nuts and mix well with a spoon. Transfer to a baking tray. You might need to use two small ones or one big one depending on how tall you like your brownies. Bake for 50-60 minutes. 
While the brownie is cooling melt a bar of dark chocolate adding 1 tbsp of coconut oil and 1 tbsp of honey. Spread it on your brownie and sprinkle the desiccated coconut. That's your brownie ready. Once it's cool keep it in the fridge. 

From the leftovers of melted chocolate I also made a new bar of chocolate. I transferred it onto a baking paper, added cacao nibs and desiccated coconut. I left it in the freezer for 30-40 minutes for it to set. Once ready keep it in the fridge.
