Peas and Cannellini Beans Soup

Ingredients:

  • 750g of frozen peas

  • 2 cans of cannellini beans

  • 1l of vegetable stock

  • Fresh mint

  • Salt and pepper

Method:

Cook the peas in 1 litre of stock. Once cooked, blend with a hand blender. Add the cannellini beans and the mint leaves and blend well. Heat the soup in the pan for few more minutes, add salt and pepper and serve.
