
Nutritious Bowl
Ingredients for 1 bowl:

1 handful of spinach leaves

1 handful of rocket leaves

1/2 green pepper, chopped
-
1/4 can of butter beans, drained and rinsed

1/2 carrot, cut into strips
-
1/2 avocado, sliced
-
1 spring onion, chopped
-
2 Tbsp of cooked millet groats/couscous/quinoa or rice
-
2 sun-dried tomatoes, chopped

For the dressing:

-
4 Tbsp tahini
-
1 clove of garlic, minced
-
Juice of 1/2 lemon
-
1 Tbsp Maple syrup
-
2-3 Tbsp hot water to thin it up
Method:

Put a handful of spinach and a handful of rocket at the bottom of the bowl

Add the rest of the ingredients on top
-
Mix the dressing ingredients and pour over the salad
What also works in the bowl is: roasted butternut squash cut into chunks, roasted Brussels sprouts, roasted beetroot, black beans... Just use your imagination and experiment!
