Nutritious Bowl

Ingredients for 1 bowl:

  • 1 handful of spinach leaves

  • 1 handful of rocket leaves

  • 1/2 green pepper, chopped

  • 1/4 can of butter beans, drained and rinsed

  • 1/2 carrot, cut into strips

  • 1/2 avocado, sliced

  • 1 spring onion, chopped

  • 2 Tbsp of cooked millet groats/couscous/quinoa or rice

  • 2 sun-dried tomatoes, chopped

For the dressing:

  • 4 Tbsp tahini

  • 1 clove of garlic, minced

  • Juice of 1/2 lemon

  • 1 Tbsp Maple syrup

  • 2-3 Tbsp hot water to thin it up



  • Put a handful of spinach and a handful of rocket at the bottom of the bowl

  • Add the rest of the ingredients on top

  • Mix the dressing ingredients and pour over the salad


What also works in the bowl is: roasted butternut squash cut into chunks, roasted Brussels sprouts, roasted beetroot, black beans... Just use your imagination and experiment!
