Gluten Free Coconut Pancakes

Ingredients:

  • 2 eggs

  • 1 Tbsp melted coconut oil

  • 1 Tbsp maple syrup

  • 5 Tbsp plant based milk

  • 2 Tbsp coconut flour

  • Pinch of salt

  • 1/4 tsp gluten-free baking powder

Method:

Mix together eggs, 1 tbsp of oil, milk, maple syrup and salt. 
Combine coconut flour and baking powder and mix into batter. Heat 1 tbsp of coconut oil on a frying pan and spoon batter once the pan is hot making pancakes about 2,5 inches in diameter. Serve with maple syrup, banana and desiccated coconut. Or mix maple syrup and lemon juice and pour over your pancakes.
