Lentil and Beetroot Salad
Ingredients:

1 cup cooked lentils

1 cup cooked beetroot, cut into chunks

Goats cheese
-
1/4 cup walnuts, chopped
-
Handful of rocket leaves
Dressing:
​

2 Tbsp each balsamic vinegar
-
2 Tbsp olive oil
-
1 Tbsp maple syrup
Method:
Mix the lentils, beetroot and rocket together. Sprinkle the cheese and walnuts and drizzle with the dressing.
