Lentil and Beetroot Salad

Ingredients:

  • 1 cup cooked lentils 

  • 1 cup cooked beetroot, cut into chunks

  • Goats cheese 

  • 1/4 cup walnuts, chopped

  • Handful of rocket leaves

 

Dressing:

  • 2 Tbsp each balsamic vinegar

  • 2 Tbsp olive oil

  • 1 Tbsp maple syrup

 

Method:

Mix the lentils, beetroot and rocket together. Sprinkle the cheese and walnuts and drizzle with the dressing.
