Almond and Strawberry Cake



  • 170g ground almonds

  • 30g coconut flakes

  • 2 eggs

  • 1 tsp baking powder

  • 1/4 cup maple syrup

  • 1/4 cup rapeseed oil

  • Orange peel from one orange

  • 1 cup of strawberries

  • Almond flakes


Mix all the ingredients apart from strawberries and almond flakes. Line a baking tin with a baking paper and pour in the mix. Add sliced strawberries and almond flakes and put into a pre-heated oven (160 degrees Celsius) for 50 minutes. 
Once ready decorate with strawberries and almond flakes and sprinkle with one teaspoon of organic gluten-free coconut flour (optional).
