Rainbow Omelette



  • 100-150g mushrooms, sliced

  • 2 handfuls of spinach

  • 1/2 red pepper, chopped

  • 1 large gherkin, sliced

  • 1/2 avocado, cut into chunks

  • Feta cheese, a handful

  • Spring onion, sliced

  • 4 eggs, beaten

  • 1 Tbsp olive oil

  • Salt and pepper to taste


Heat the oil in a frying pan. Add the mushrooms and fry for 5-7 minutes. Once ready add the rest of ingredients, apart from eggs and feta, and cook for further 3 minutes. Finally add the eggs and crush feta on top and cook on a medium heat. Add salt and pepper. Instead of flipping the omelette on the other side you can cook in the grill until it is set and golden. Dress it with some spring onion and feta.
