Quick Mackerel Salad

Ingredients:

  • ​Spinach, handful

  • Handful of cherry tomatoes, halved 

  • 1 red pepper, chopped

  • 1/2 cup smoked mackerel

  • 1 avocado, cut into chunks

  • 1 tsp sesame seeds

Dressing:

  • 2 Tbsp olive oil and

  • 2 Tbsp balsamic vinegar

Place all the ingredients in a bowl and mix together. Quick and healthy lunch ready in 5 minutes.
