Vegetarian Frittata

Ingredients:

 

  • 2 cloves of garlic, chopped 

  • 2 onions, chopped 

  • 400g of mushrooms, cut into chunks 

  • 750g of frozen spinach 

  • 400g of frozen garden peas 

  • 4 small sweet potatoes (cut into cubes and boiled for 15 minutes) 

  • 2 red peppers, chopped

  • 7 eggs, beaten

  • 1 Tbsp olive oil

 

Method:

Heat the oil in a large frying pan and add the garlic and onions and fry for about 3-5 minutes. Next, add the frozen vegetables and cook until defrosted. Finally add the mushrooms and cook for 5-7 minutes before adding the sweet potatoes and peppers and cooking further 5 minutes. Mix all the ingredients together and the eggs. Create little holes/pockets with a fork to allow the eggs to mix well with the vegetables and cook on a slow heat for 20-30 minutes or once edges are golden. Then put it under a grill and cook further 10-15 minutes for the top to set.
