Eggs on Spinach and Courgette
Ingredients:

2 eggs
-
1 red onion, chopped
-
1 courgette, chopped

Spinach, handful
-
1 Tbsp coconut oil

Salt and pepper
Method:

Melt the coconut oil in a saucepan on a medium heat.

Fry the onion until it's soft then add the courgette and fry for about 10 minutes stirring occasionally.

In the meantime poach the eggs in a separate saucepan of boiling water.

Once your vegetables are ready add a handful of spinach and cook for further 2-3 minutes.

Plate the vegetables up and place the eggs on top. Season with a pinch of salt and some pepper.
