Eggs on Spinach and Courgette

Ingredients:

  • 2 eggs

  • 1 red onion, chopped

  • 1 courgette, chopped

  • Spinach, handful

  • 1 Tbsp coconut oil

  • Salt and pepper

Method:

  • Melt the coconut oil in a saucepan on a medium heat.

  • Fry the onion until it's soft then add the courgette and fry for about 10 minutes stirring occasionally. 

  • In the meantime poach the eggs in a separate saucepan of boiling water.

  • Once your vegetables are ready add a handful of spinach and cook for further 2-3 minutes.

  • Plate the vegetables up and place the eggs on top. Season with a pinch of salt and some pepper.
