Breakfast For Two


  • 1 red onion, chopped

  • 2 cans chopped tomatoes

  • Fresh basil

  • 1 can red kidney beans

  • 1 can sweetcorn

  • 4 eggs

  • 1 Tbsp coconut oil

  • Dill, chopped

  • Salt and pepper to taste


Fry the red onion in the coconut oil, add both cans of chopped tomatoes, a few basil leaves and a sprinkle of chopped dill. Cook it on a small heat to allow the water from the tomatoes to evaporate. Then add the red kidney beans and sweetcorn and cook for a further 15 minutes. Season to taste. Crack the eggs on top and cover. Serve once eggs are cooked.
